This looks great. Hopefully, Alton will now start to define the hotels more!

For our sins our party including two families (5 girls under 6!!!) are spending two nights here later in the week. We like good food and to echo some of the thoughts earlier in the thread, the hotel menu is a sad sad thing for anyone over 8. As I'm not a complete grinch I'm sure we'll end up there for the first night, but I'm wondering where we could go on the second evening to get a better selection. I've always been a daytripper to the park and have never stayed over so I'm in need of recommendations not knowing how far apart the other restaurants are?

If you've not been yet, the hotel restaurants are not far apart (except for Rollercoaster Restaurant as this is on park).
For grown up food its likely Secret Garden or Crooked Spoon, or the premium Emperors Grill.

Is Emperors Grill open again? I have a feeling it is closed.

Crooked is very nice for food if you're not up for going to RCR.
